As a global culinary apparel brand, we dress the most talented Chefs across the world. Each month Chef Works features a different Chef with their answers to our Culinary Questions. This month we meet Maxine Cauchi Head Chef at Capo Mulini Restaurant Marsaxlokk
From when it all started?
It's been eleven years now, I was only 16, as I look back and smile because it has been a beautiful challenging journey so far.....and I'm not done yet!!
My mother Mariella Cauchi, being a restaurant owner encouraged me to start my carrier away from the family business, to get the right education, the basics, the right leadership and management skills to reach as far in my carrier as possible. Today at twenty-six years, I went back to University and accomplished the Master Chef Diploma. I'm currently the Head Chef of Capo Mulini in Marsaxlokk and I have recently started involving myself in the family business.
Who was your greatest cooking inspiration?
There is no particular chef, every chef has his skills to offer and to learn from. What I most admire is how female chefs manage to have a family whilst continue with their carrier. I hope one day to manage and balance everything in the near future.
What is your favorite cooking dish?
Fish...definitely
Who would you most like to cook for?
Rather cook for, I would prefer to cook alongside Marco Pierre White.
Any awards?
Malta Kulinarja 2018 - Silver medal in Vegetarian mystery box with Chef
Brady Dalli.
What do you enjoy doing most when you're outside the kitchen?
Even tho I have a very busy schedule I always try to find some time with my mum and friends. I always look forward to spending a day off in Gozo with my mother, having a nice fish lunch accompanied by a glass of wine. (or two)
Weirdest Food you ever ate?
Nothing weird so far.
Your favorite Cookbook?
White Heat by Marco Pierre White.
What is your favorite Chef Works Item?
It has to be my female cool zipper jacket, it is well fitted, the material is soft, comfortable, keeps me cool in these hot days. I really look smart and proud of wearing these uniforms.
Your biggest achievement?
Still, in the pipeline.... two projects are on the way!
Your best Culinary tip?
Be strong, stay humble, the pressure is part of the game, accomplish anything that makes you are scared of....you might be surprised cause it can turn out as your greatest success!
